Not too long ago I was invited to an all girls clothing swap party and was asked to bring a savoury appetizer. I wasn’t sure what to bring as I needed to make something simple, fast and a crowd-pleaser.  So as usual, I looked at what I had in my fridge and pantry for some inspiration.  I had a wheel of brie and a small jar of sundried tomatoes.  Then I consulted my friend google on what can I make with these two ingredients and that’s when I came across this recipe from whiteonricecouple.com.  I was real happy with this recipe because it took me no time to put it together, popped it in the oven while I was doing my make up and changing into something more presentable, walked in the party with my warm dip and crusty baguette and everyone loved the dip.  At first, some of the girls were a little hesitant and looked slightly confused as they investigated what this gooey, melted cheese business is all about and then one brave girl decided to take the plunge and tried my dip.  Guess what? Soon after, all these girls flocked over to my dip and were raving about the it as they cleaned out the bowl! This recipe is a definite keeper.  It’s definitely on my list of go-to recipes! And with this winter break coming up, I am sure most of you will have friends and family dropping by and what better way to entertain them than to serve them this elegant, yet simple appetizer.  So here’s the recipe for you to try:

Baked Brie and Sundried Tomato Dip

Ingredients
  • About 10 oz. Brie
  • 8 oz. jar of sun dried tomatoes, packed in oil, drained and chopped
  • 2 medium garlic cloves, minced
  • 1 heaping teaspoon of dried thyme or ¾ teaspoon fresh thyme leaves
  • fresh cracked black pepper
  • baguette or crackers
Instructions
  1. Preheat oven to 350 degrees
  2. Remove rind from brie, then cut brie into cubes
  3. In medium bowl, combine sun dried tomatoes, garlic, thyme, fresh cracked black pepper
  4. In a small-medium baking dish, layer the base with about ⅓ of the sun dried tomato mixture then top with the ½ of the chopped brie. Repeat the layering until the top layer is the sun dried tomato mixture.
  5. Bake in oven for about 30 minutes, or until the brie completely melts and becomes bubbly. You may need to stir the dip one time, about 15 minutes into the baking to combine the layers.
  6. Serve warm with bread or crackers
