Bacon, Cheese and Chive Scones

Ingredients
  • 2 cups of all purpose flour
  • 1 teaspoon of baking powder
  • ¼ teaspoon of baking soda
  • ½ teaspoon of salt
  • 8 tablespoonspoons of unsalted butter, frozen
  • half a cup of sour cream
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • ½ pound of bacon, cooked, cooled and chopped
  • 2 tablespoons of finely chopped chives
  • ¼ cup of heavy cream
Instructions
  1. Adjust oven rack to lower middle position and preheat oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, mix flour, baking powder, baking soda and salt.
  4. Using the large holes of a box grater, grate the frozen butter into your flour mixture.
  5. Use the tips of your fingers to work in the butter (the dough will be crumbly).
  6. In a small bowl, whisk together the sour cream and egg until smooth.
  7. Using a fork, stir the sour cream mixture into the flour mixture until large dough clumps form.
  8. Stir in the cheese, bacon and chives until they are well incorporated into the dough.
  9. Use your hands to press the dough against the bowl into a ball (at first it may seem that there's not enough liquid, but as you press, the dough will come together).
  10. Place the dough on a lightly floured surface and pat into a 7 inch disk about ¾ inch thick.
  11. Use a sharp knife to cut the dough into 8 triangles.
  12. Place the scones onto the prepared baking sheet.
  13. Then use a pastry brush to lightly brush the tops of the scones with heavy cream (this will help you achieve a nice golden brown colour).
  14. Bake until golden, about 15-17 minutes.
  15. Cool for 5 minutes and serve warm or at room temperature.
