Smoke Salmon Wrap with Boursin and Pea Shoots

We love love love smoked salmon (can you tell?)!  We used to live real close to a lot of fantastic Jewish delis and our most favorite lunch is bagel and lox! And one day while thinking of what to make for lunch (I spend a lot of time coming up with our weekly meal plan – I know that sounds like a lot of work, but I promise it makes your life easier as the week goes on) and so we decided to come up with our own smoked salmon sandwich for lunch.   Our twist includes the following:  boursin (super fantastic, creamy, garlicky cheese) and pea shoots (to convince us that it’s really spring) with all the usual ingredients – smoked salmon, dill and lemon! This smoked salmon wrap with boursin and pea shoots makes for a great lunch! You can even make it the night before since the cheese keeps the wrap moist but not soggy and the pea shoots add crunch! Ingredients
  • 4 wholewheat tortilla wrap
  • 250 grams of smoked salmon
  • Boursin cheese (we used the garlic flavored one)
  • 2 cups of pea shoots
  • half a lemon
  • dill
Instructions
  1. Spread boursin all over the tortilla wrap.
  2. Top with smoked salmon.
  3. Drizzle the smoked salmon with lemon juice and scatter dill all over.
  4. Top with pea shoots and wrap!
