Grilled Tuna Avocado Melt

One will always find a tin or two of tuna  in our pantry, but since  we’ve overdosed ourselves on tuna lately I’ve been hiding them in the very  back of the lowest shelf!  Well, the other day, the husband had this idea of making a tuna sandwich and my immediate response was “No, Not tuna again!” I thought that was the end of it.  Lo and behold the very next day, Arkadi volunteered to make us lunch and guess what he made? A tuna sandwich! But this was no ordinary tuna sandwich.  He gave me a piece to try and to my surprise, it was really good! So good in fact, I forgot that I have banned tuna in our house!   And to make it even better,  Arkadi had this brilliant idea of grilling the sandwich! Take it from me, the former tuna hater, this grilled tuna avocado melt  will make your lunch so exciting, you’d actually want to stop working or doing whatever else you’re doing and savour each and every bite of this sandwich! So here’s this simple recipe for you to try:

Grilled Tuna Avocado Melt

Ingredients
  • 1 tin of tuna
  • 1 ripe avocado
  • 1 tablespoon of mayonnaise
  • 1 tablespoon of olive oil
  • 1 stalk of green onion
  • ¾ of a cup of grated cheddar cheese
  • salt and pepper
  • 2 slices of sandwich bread
Instructions
  1. In a bowl, add the tuna, mayo, olive oil, chopped green onion and season with salt and pepper. Mix to combine.
  2. Spread the tuna mixture onto one slice of bread.
  3. Top with sliced avocado and grated cheese.
  4. Top with another slice of bread.
  5. Grill the sandwich until the cheese is melted.
