Pancakes with Blueberries and Chia Seeds

Ingredients
  • 1 and ¼ cup of whole wheat flour
  • 1 tablespoon of sugar
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 egg, slightly beaten
  • 1 and 1/14 cup buttermilk * (we used a substitute)
  • 2 tablespoons of canola oil
  • 1 cup of fresh blueberries
  • 1 tablespoon of chia seeds
Instructions
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  2. Next combine the egg, buttermilk and oil together.
  3. Add the wet ingredients to the dry ingredients and whisk until just blended.
  4. Gently fold in the blueberries and chia seeds.
  5. Pour batter onto a greased hot pan or griddle.
  6. Turn the pancake over with a spatula when the top start bubbling.
  7. Cook the other side until golden brown.
  8. Serve warm with maple syrup.
Notes
We didn't have buttermilk at home so we just used regular milk with 1 tablespoon of white vinegar.
You let it stand for a few minutes and then you are good to go.
This recipe yielded 12 pancakes for us.
Do not over mix the batter.
