Paleo Fried Chicken

- 1 C coconut oil
- 2 large eggs
- 1 C almond flour (I used almond meal)
- 1 tsp paprika
- 2 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp thyme
- 1 tsp chipotle powder or cayenne pepper
- 2 pounds chicken
- salt and pepper
- Preheat oven to 400F.
- Heat oil in a large frying pan.
- Whisk eggs in a medium bowl.
- Combine all dry ingredients in a large bowl, and mix well.
- Season your chicken with salt and pepper.
- Dip chicken in whisked eggs.
- Then coat/cover chicken with dry mixture, and place in hot oil.
- Allow both sides to brown.
- Place drying rack on a sheet pan and assemble chicken on the rack so there is space between all pieces.
- Bake in oven for 20-25 minutes.
*we used chicken thighs but to make it even healthier, you can swap for chicken breasts.
