Paleo Fried Chicken

Ingredients
  • 1 C coconut oil
  • 2 large eggs
  • 1 C almond flour (I used almond meal)
  • 1 tsp paprika
  • 2 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp thyme
  • 1 tsp chipotle powder or cayenne pepper
  • 2 pounds chicken
  • salt and pepper
Instructions
  1. Preheat oven to 400F.
  2. Heat oil in a large frying pan.
  3. Whisk eggs in a medium bowl.
  4. Combine all dry ingredients in a large bowl, and mix well.
  5. Season your chicken with salt and pepper.
  6. Dip chicken in whisked eggs.
  7. Then coat/cover chicken with dry mixture, and place in hot oil.
  8. Allow both sides to brown.
  9. Place drying rack on a sheet pan and assemble chicken on the rack so there is space between all pieces.
  10. Bake in oven for 20-25 minutes.
Notes
*we used chicken thighs but to make it even healthier, you can swap for chicken breasts.
