Who does not love cookies?! My favorite, obviously, is chocolate chip pecan cookies!  I am very specific as to how I want my cookies: more doughy than crispy, always with pecans, bite size and not too much chocolate chips!  The one batch I made before this one turned out too crispy and thin and I did not like them at all.  Arkadi, on the other hand, liked them! I don’t think he really has any preference – to him a cookie is a cookie ! So on to my story, my co-worker brought these cookies to work and at first I did not think much of it……until I tried one…then another and took home a third one for later! I loved her cookies ! She made the exact same – chocolate chip pecan cookies.  Naturally, I asked her for a copy of her recipe but lo and behold it was like 6 pages worth of reading! To make things worse, I misplaced the recipe and since then I’ve been on a hunt for a recipe that makes the exact cookie I like!   Recently, I found a recipe that yields cookies exactly how I prefer them and on top of that, it’s not 6 pages long!  So here’s the recipe for you:

Chewy Chocolate Chip Pecan Cookies

Ingredients
  • 2 cups of all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup packed brown sugar
  • ½ cup white sugar
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 egg yolk
  • 1 cup semisweet chocolate chips
  • 1 cup pecan pieces
  • 2 tablespoons flax seeds (optional)
  • ¼ cup oats (optional)
Instructions
  1. Preheat the oven to 325F and prepare baking sheets with parchment paper.
  2. In a bowl, sift together flour, baking soda and salt.
  3. In another bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Then, add the vanilla, egg and egg yolk and beat it together with the butter and sugar mixture until well combined. Add the flour mixture and blend. Finally, add the chocolate chips, pecans, flax (if adding) and oats (if adding).
  4. Roll a tablespoon of dough onto a ball and put on the baking sheet. Make sure to allow enough space in between the dough balls. Bake until golden brown for about 11 to 14 minutes. When baked, leave cookies on the baking sheet and place the baking sheet on a wire rack to cool until the cookies can be transferred onto a wire rack without breaking apart.
